Known as The Pink City due to its trademark terracotta bricks, Toulouse is small enough to discover on foot - and worth every step. Extraordinary architecture, art galleries, museums, shopping, sport and, d’uh, food will give you plenty to discover even if you only have one day.

Eat.
Have a coffee and croissant in the square of the Capitole, walk across the river to Chez Loustic for a memorable long French lunch and wonder at how little it cost compared to anything in England, then finish the day with drinks and a sunset amble on the banks of the Garonne.

Sleep.
If you’re too sozzled or exhausted to drive home, book a room at one my favourite hotels anywhere, Maison Soclo. Wonderful people, lovely rooms and an amusing marauding dog. Given how many insanely good restaurants Toulouse has to offer, it’s worth gathering the entire staff who will consequently have a spirited discussion about which will suit you best.
